Owen Redfern spent four years managing green-bean sourcing for a mid-size roastery in Bristol before he got tired of watching good coffee go stale on a shelf. The roastery was roasting on Mondays and dispatching on Fridays, sometimes the following Tuesday. By the time a bag reached a customer, it was already ten days off the drum. Owen kept a spreadsheet of the gap between roast date and dispatch date. The average was eleven days. He showed it to the operations manager. Nothing changed. So in the autumn of 2019, he rented a corner of a shared food-production unit, bought a secondhand Probat L12, and started Shardcore Blend with the single rule that nothing ships more than 48 hours after roasting.
